Marie, I've used chicken and ground turkey with chili, chipotle, cumin, garlic, bay leaf, onion, sea salt cooked in a little chicken broth until tender. Chicken gets shredded, guacamole gets made, cheese get shredded, tomatoes and green onions chopped. My husband likes beans, too. Wrapper is whatever lettuce came in the CSA box or looked good at the store. I also do a vegetarian version using ground walnuts instead of meat. Very messy, but really good!
Forgot to mention that if you are using walnuts, they should be soaked in warm water for a few hours before grinding. I use a regular old blender and just add some of the water til they reach the right consistency, then add spices. And yes, I use cilantro, too. I've also had this with a mango/tomato/avocado/green onion/garlic and cilantro salsa.
