Late breakfast this morning, very quick muffins. From the out-of-print Bread, Buns, Cakes and Cookies, by Lesley Faull. A staple of my upbringing and a brilliant book.
8/17/09 - Recipe, sorry I didn't write it yesterday. The heat.
Lesley Faull's Basic Muffins.
11-12 Muffins
2 cups flour
3 Tbsp sugar
3 tsp baking powder
1/2 tsp salt
1 egg, beaten
1/4 cup (1/2 stick) butter, melted
1 cup milk
In a well in the centre of the flour mixed with b. powder, pour all other ingredients and mix quickly with a spoon. It should look lumpy, not smooth. Fill greased muffin tray cups 3/4 full and bake at 400'F/200'C for about 20-25 minutes till lightly brown.
Variation. Fill muffin cups 1/4 way, add a small spoon of jam, cover with more muffin mix. Bake as usual. These are the ones I used to whip up for impromptu tea parties on Clifton's 4th Beach in the late afternoons.
Variation. In bottom of each muffin cup put a spoonful of honey with sliver of orange peel. Fill with mix and bake as usual.
With red currant jam.

we often make muffins at our house. buttermilk is the magic ingredient. and every batch is different...flours and fruits according to the chefs whims. your red current jam looks really good...
ReplyDeleteAugust in DC is at least as bad...95 degrees and "code orange" air quality forecast today...plus the maniac cicadas whirring, letting you know that it really is hot and really is late summer. The fresh muffins with your own red currant jam must've been wonderful.
