Wild greens

Pokeweed, near Dead Horse Bay.

  1. I wash thoroughly, boil in water/chicken broth for about an hour. Then fry a couple pieces of bacon, reserving some of the bacon drippings. Squeeze most of the liquid from the greens.. saute salad in bacon drippings (cast iron skillet)then pour a couple of beaten eggs in. Serve immediately with crumpled bacon bits. Of course the greens offset the bacon calories.
