Potted puerco


There is some very fattening, and very delicious, potted pig next door, at (the Food). Above, you see last year's rillettes, sliced while still chilled from the fridge. Mistake! It even looks boring.

It must be at room temperature, to allow the softened fat to convey all the deep flavour to the tongue, instead of trapping it in chilliness. Below, this evening's snack. Good!
