Oh, Pam - it's easy. Use the pastry recipe at (the Food). And pit enough cherries to fill the pie, I used 2 1/2 lbs. Add some sugar to them (only about 1/4 cup), bring to a simmer, let the juice cook out for five minutes at a simmer. Strain. Line spring form with pastry, put in (cool) cherries, cover with pastry lid, poke holes, bake at 350 for about 35 minutes. Use juice for something else (drinks?).
