Transformation of herba non grata


1. Garden weed - Amaranthus retroflexus (or possibly another species...). To wit: pigweed. 


2. Harvested crop.


2. Green sauce with pureed, preserved lemon.


4. Top layer of appetizer, above aioli, red pepper sauce and  pesto. 

Instruction: dip toast, eat.

  1. Oh how I wish I could share my pigweed with you! It grows like it is on steroids in my garden - Anything planted into the ground instead of raised beds will be overcome without constant hoeing (pole beans, corn, my sunflower patch). And it's been known to jump the barrier into the raised beds but it's much easier to pull there. THere are many Georgia farmers who would love to know how to turn this into a cash crop!
