Tiramisu: my way

I have nothing against the finger biscuit-drenched-in-proper-espresso-slathered-with -mascarpone version. But this is my pick-me-up (...er, tira mi su...?). Crunchy, sweet, oniony, minty. Sliced fennel, oranges, red onion, pomegranate seeds - and a vinaigrette with sherry vinegar.
