Hmmm...Michael is an extraordinarily gifted cooker of meat (and fish) on real coals (no briquets, please) but he is neither South African nor does he live in Brooklyn. Alas.

Are you looking for a boerewors recipe? I had a friend here who (years ago) made her own and I may be able to dig up the recipe.
