Tomatoes and Bacon - Phase 2

  1. A great bacon/tomato combo is: fry some bacon until crisp. Remove from pan. Add a chopped onion and a couple of cloves of chopped garlic to the pan and cook until onion is translucent. Add tomatoes, chopped (about 4 large or 6 medium) and cook down. (In the winter, canned tomatoes are a fine substitute.) Season with salt, lots of pepper, a few chili pepper flakes. Let simmer about 15 minutes. Toss with a pound of cooked pasta of your choice and a handful of chopped parsley. Grate a heapin' helpin' of fresh parm on top. Serves two generously or four more modestly. It's wonderful! It's marvelous!
